Beef flap meat, aka loin flap, is a great grilling cut with exceptional flavor and beefiness.  Beef flap meat is a 2.5-3 lb piece of meat that is about 1/2 to 1 inch thick.  In the packaging it looks like one large piece, and it will unroll to be about 1 inch thick and 12-15 inches long -- perfect for the grill.  

Beef flap meat is lean and deeply striated with meaty texture.  It holds marinades very well.  Slice this cut against the grain to unlock it's best flavor and tenderness.  Bravo Beef Flap Meat has been dry aged for 21+ days for outstanding tenderness.

If you like hangar steak, this cut has many of the same qualities -- superior flavor, striated fibrous muscle texture, and great on the grill.
